Fancy trying your hand at the art of homemade ribs? Come on, we’ll share with you our secret recipe (well, almost…)
Ingredients :
- 2 kg pork ribs
- 2 tablespoons of brown sugar
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 1 teaspoon dry mustard
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 180 ml ketchup
- 60 ml cider vinegar
- 2 tablespoons honey
- 1 tablespoon Worcestershire sauce
- Worcestershire sauce
- A few drops of Tabasco (to taste)
1. Preparation of the ribs
Remove the thin membrane from the back of the ribs for more tender meat.
Rub them with a mixture of brown sugar, paprika, chili powder, mustard, onion powder, salt and pepper. Wrap in cling film and marinate in the refrigerator for at least 1 hour (ideally overnight).
2. Baking
Preheat the oven to 160°C.
Wrap the ribs in aluminum foil and bake for 2 hours until the meat is tender.
3. Homemade barbecue sauce
While the ribs are cooking, mix the ketchup, cider vinegar, honey, Worcestershire sauce and Tabasco in a saucepan. Simmer for about 10 minutes.
4. Grill finish
Remove the ribs from the oven, increase the temperature to 220°C and place them under the broiler.
Spread them generously with your homemade barbecue sauce and let them caramelize for a few minutes.
5. Tasting
Serve the ribs piping hot, accompanied by home fries, coleslaw or grilled vegetables.
